To change your game server name you must stop your server then navigate to the "Configuration Files". Next to "ServerHostSettings.json" click on "config editor" (easist way) or "text editor" and adjust, then save and start your server.
The similar can be done for game settings - look for buttons next to "ServerGameSettings.json"
